A secluded, detached period property just a mile outside Enniskillen,
Ferndale Country House & Restaurant enjoys a lovely
hilltop setting that commands extensive woodland views. Inside, the marble floors, elegant
rooms and the open fires using wood from sustainable resources combine to create a relaxed country
house atmosphere. Fresh flowers that are changed each day and the paintings by local artists hung
around the walls all add to this pleasant environment.
Chef/patron Peter Mills took over this outstanding hotel in the autumn of 2004 and his
inventive cuisine has already inspired some enthusiastic comments. Terry Keane in
The Sunday Times, for example, heaped praise on Peter's food
"His menu rivals the very best of Patrick Guilbaud,
outshines Conrad Gallagher and is right up there with Kevin
Thornton". Sample dishes include fillet of Lisgoole Abbey beef,
braised oxtail, black bacon and lardons; cannon of lamb, confit
shoulder and sweetbread beignet; and spiced pannacotta,
apricot crumble and amaretto caramel. Vegetarian and children's
options are also available. Organic produce locally sourced is used wherever possible and the impressive menu is complemented by
an extensive wine list of both Old and New World wines.
The accommodation at Ferndale comprises six guest bedrooms, all with en suite facilities
and some furnished with four-poster beds. The hotel also has a fully licensed bar and
comprehensive facilities for conferences and
business meetings. Weekend breaks, including two nights bed & breakfast and one
evening meal in the restaurant are also offered.
Visitors will find plenty to see and do in the area. Golf, water sports,
horse trekking, rambling, caving and climbing, and hunting, shooting and fishing are
all available within easy reach. The hotel can also arrange for holistic services such
as massage and yoga.
Nearby Enniskillen is a picturesquely located market town with a
medieval centre, a 15th century castle, a popular crafts centre and a fine park set on a
steep hill above the town.
